  • 12 oz Fusilli Pasta 340g, protein-enriched preferred
  • 1 lb Lean Ground Beef 454g, 90/10 or 93/7
  • 1 tbsp Olive Oil 15ml
  • 1 cup Tomato Sauce 240ml, plain canned sauce
  • 1/2 cup Heavy Cream 120ml
  • 1 cup Mozzarella Cheese 113g, shredded
  • 2 tbsp Fresh Parsley 10g, finely chopped
  • 1 tsp Garlic Powder 5g

  • 1 Large pot For boiling pasta
  • 1 Heavy-bottomed Skillet Stainless steel or cast iron preferred

Method
 

Preparation
  1. Cook fusilli in salted boiling water for 1 minute less than package directions. Drain, reserving 1/2 cup of pasta water.
  2. In a skillet, heat olive oil over medium-high. Add beef and sear without moving for 3 minutes until a deep brown crust forms. Break into large crumbles and cook through.
  3. Lower heat to medium. Stir in tomato sauce, heavy cream, and garlic powder. Stir until the sauce is a glossy orange color.
  4. Toss the pasta into the sauce. Top with mozzarella and cover for 60 seconds until melted and bubbly. Garnish with fresh parsley.

Notes

Save your pasta water to adjust sauce glossiness.
Sear the beef thoroughly for maximum flavor.
