Preparation
- Season chicken breasts and sear in avocado oil over medium-high heat until a deep golden-brown crust forms. Ensure internal temp hits 165°F (74°C).
- Shred the chicken and combine in a bowl with black beans and 1/2 cup (120ml) of the enchilada sauce.
Assembly
- Dip corn tortillas in sauce to soften, fill with chicken mixture, and roll tightly. Place seam-side down in a white ceramic baking dish.
- Pour the remaining sauce over the center of the rolls and top with a heavy layer of the combined cheddar and Monterey Jack cheeses.
Baking
- Bake at 375°F (190°C) for 20 minutes covered, then 10 minutes uncovered. Broil for 2-3 minutes until cheese is bubbly with toasted golden-brown spots.
