High-Protein Chickpea Salad Ingredients
  • 2 cans (15 oz / 425g each) Chickpeas Rinsed and drained
  • 1 large (300g) English Cucumber Quartered and sliced
  • 1 pint (250g) Cherry Tomatoes Halved
  • 1/2 small (60g) Red Onion Finely diced
  • 4 oz (115g) Feta Cheese Broken into irregular crumbles
  • 1/2 cup (15g) Fresh Flat-Leaf Parsley Finely chopped
  • 1/4 cup (60ml) Extra Virgin Olive Oil High quality for best shimmer
  • 3 tbsp (45ml) Fresh Lemon Juice Approx. 1 large lemon
  • 1 tsp (7g) Honey Or maple syrup for vegan
  • 1 clove (5g) Garlic Grated or pressed
  • 1/2 tsp (3g) Fine Sea Salt To taste
  • 1/2 tsp (3g) Black Pepper Freshly cracked

Equipment

  • 1 Large Mixing Bowl Preferably shallow for better presentation

Method
 

Preparation
  1. Drain the chickpeas and rinse under cold water in a fine mesh strainer for 30 seconds until the water is clear. Allow to drain thoroughly.
  2. Quarter the English cucumber and slice into half-inch pieces. Halve the cherry tomatoes and finely dice the red onion into uniform small bits.
Dressing and Assembly
  1. In a small jar or bowl, whisk together olive oil, lemon juice, honey, garlic, salt, and pepper until the mixture is glossy and emulsified.
  2. Place chickpeas and vegetables in a shallow white bowl. Pour the vinaigrette over and toss gently until every ingredient shimmers.
  3. Top with irregular crumbles of feta cheese and a generous dusting of chopped parsley. Serve immediately at room temperature or chilled.

Notes

For best results, rinse chickpeas thoroughly to remove the canning liquid taste.
Use a block of feta and crumble it yourself for the best texture and visual appeal.
