Main Ingredients
  • 4 oz Ground Beef (80/20) Divided into two 2oz balls
  • 1 Sesame Seed Bun Plus a middle 'club' layer
  • 1 slice Yellow American Cheese
  • 2 tbsp White Onion Finely diced
  • 1/2 cup Iceberg Lettuce Shredded
  • 2 slices Dill Pickles
  • 1/2 cup Mayonnaise
  • 1 tbsp Sweet Relish
  • 1 tsp Yellow Mustard
  • 1/2 tsp Paprika For the orange tint

Equipment

  • 1 Cast Iron Skillet Used for searing patties.
  • 1 Metal Spatula For pressing patties thin.

Method
 

Preparation
  1. Whisk mayonnaise, relish, mustard, and paprika in a bowl. Refrigerate for 30 minutes to develop the orange tint.
  2. Butter all three bun layers and toast in a skillet until golden brown and warm.
Cooking and Assembly
  1. Flatten beef into thin patties. Sear in a hot skillet for 2 minutes per side until a deep crust forms.
  2. Layer sauce, onions, lettuce, cheese, and patty on the bottom bun. Add middle bun and repeat with sauce, lettuce, pickles, and the second patty. Top with the sesame bun.

Notes

Keep the beef cold until cooking to ensure a better sear.
Soak onions in cold water to remove the harsh bite.
