  • 6 cups Sweet corn kernels Fresh or thawed from frozen
  • 4 tbsp Unsalted butter
  • 3 tbsp Honey
  • 4 oz Cream cheese Softened and cubed
  • 1 tbsp Neutral oil Avocado or vegetable oil
  • 1/2 tsp Sea salt
  • 1/2 tsp Cracked black pepper
  • 2 tbsp Fresh chives Finely minced

Equipment

  • 1 Cast Iron Skillet 12-inch rustic black skillet preferred.
  • 1 Wooden spoon For stirring and scraping fond.

Method
 

Preparation and Cooking
  1. Heat oil in a large cast-iron skillet over medium-high heat. Add corn and spread into an even layer. Let cook undisturbed for 2-3 minutes until golden-brown seared marks appear.
  2. Lower heat to medium. Add butter, honey, and cream cheese. Stir constantly until the ingredients melt together into a thick, glossy, pale cream-colored sauce.
  3. Stir in salt and black pepper. Remove from heat and top with finely minced chives before serving hot from the skillet.

Notes

Ensure corn is dry before searing for the best texture.
Use room temperature cream cheese to avoid clumping in the sauce.
