- Heat oil in a large cast-iron skillet over medium-high heat. Add corn and spread into an even layer. Let cook undisturbed for 2-3 minutes until golden-brown seared marks appear.
- Lower heat to medium. Add butter, honey, and cream cheese. Stir constantly until the ingredients melt together into a thick, glossy, pale cream-colored sauce.
- Stir in salt and black pepper. Remove from heat and top with finely minced chives before serving hot from the skillet.
