  • 1 lb Atlantic Salmon Fillet Cut into 1-inch cubes (450g)
  • 1 tsp Cornstarch For crispy edges (5g)
  • 1/2 tsp Kosher Salt To taste
  • 2 tbsp Avocado Oil For high-heat searing (30ml)
  • 1/3 cup Honey Raw clover honey preferred (80ml)
  • 2 tbsp Soy Sauce Low-sodium (30ml)
  • 1 tbsp Lemon Juice Freshly squeezed (15ml)
  • 4 cloves Garlic Finely minced
  • 1 tbsp White Sesame Seeds Toasted, for garnish
  • 2 stalks Green Scallions Finely sliced rings

Equipment

  • 1 Cast Iron Skillet Ensures a perfect crispy sear.
  • 1 Tongs For flipping salmon bites carefully.

Method
 

Preparation
  1. Pat the salmon dry with paper towels. Cut into 1-inch cubes. Toss with salt and cornstarch until lightly coated.
Cooking
  1. Heat oil in a skillet over medium-high heat. Add salmon cubes in a single layer. Sear for 2-3 minutes until dark caramelized crispy edges form. Flip and cook for 2 more minutes.
  2. Reduce heat to medium. Add garlic for 30 seconds. Pour in honey, soy sauce, and lemon juice. Stir until the sauce is a thick, glistening amber-colored translucent glaze.
  3. Toss the salmon cubes to coat thoroughly. Transfer to a white ceramic bowl. Top with sesame seeds and scallion rings.

Notes

Use a heavy skillet for the best sear.
Don't overcrowd the pan or the salmon will steam instead of crisping.
