Preparation
- Whisk 2 tbsp honey, 2 tbsp lime juice, oil, and salt. Marinate chicken for 30 minutes.
- Combine diced mango, red pepper, red onion, jalapeno, remaining lime juice, and cilantro in a bowl. Set aside.
Cooking
- Grill chicken over medium-high heat for 5-6 minutes per side until deep char marks appear.
- Brush with remaining honey-lime mixture in the last 2 minutes. Top with salsa and serve.
Notes
Pound the chicken to 1/2 inch thickness for even cooking.
