Honey Lime Chicken with Mango Salsa

Grilled Chicken Components
  • 2 8 oz Chicken Breasts Boneless, skinless, pounded even
  • 3 tbsp Honey Divided for marinade and glaze
  • 1/4 cup Lime Juice Freshly squeezed
  • 2 tbsp Olive Oil Extra virgin
  • 1 tsp Kosher Salt
Mango Salsa Components
  • 1 large Mango Finely diced
  • 1/2 cup Red Bell Pepper Finely diced
  • 1/4 cup Red Onion Minced
  • 1 small Jalapeno Seeded and minced
  • 1/4 cup Cilantro Chopped fresh leaves

Equipment

  • 1 Outdoor Grill or Grill Pan For achieving deep char marks
  • 1 Chef's Knife For fine dicing of salsa

Method
 

Preparation
  1. Whisk 2 tbsp honey, 2 tbsp lime juice, oil, and salt. Marinate chicken for 30 minutes.
  2. Combine diced mango, red pepper, red onion, jalapeno, remaining lime juice, and cilantro in a bowl. Set aside.
Cooking
  1. Grill chicken over medium-high heat for 5-6 minutes per side until deep char marks appear.
  2. Brush with remaining honey-lime mixture in the last 2 minutes. Top with salsa and serve.

Notes

Pound the chicken to 1/2 inch thickness for even cooking.
Ensure the grill is very hot before adding the meat to get those dark marks.
