Ingredients
  

  • 2 Large Flour Tortillas (10-inch)
  • 2 cups Shredded Cooked Chicken A rotisserie chicken works great.
  • 1.5 cups Shredded Monterey Jack & Cheddar Cheese Blend
  • 1/4 cup Red Onion finely chopped
  • 2 tbsp Fresh Cilantro chopped
  • 2 tbsp Butter
  • 1/3 cup Honey
  • 1 tsp Red Pepper Flakes or more, to taste
  • 1 tsp Apple Cider Vinegar

Method
 

  1. Prepare the Hot Honey: In a small saucepan over low heat, gently warm the honey, red pepper flakes, and apple cider vinegar. Stir until combined and slightly thinned. Do not let it boil. Set aside.
  2. Mix the Filling: In a medium bowl, combine the shredded chicken, half of the cheese blend (about 3/4 cup), the finely chopped red onion, and cilantro. Add two tablespoons of your prepared hot honey and toss everything together until the chicken is evenly coated.
  3. Assemble the Quesadillas: Lay a tortilla flat. Spread half of the chicken mixture over one half of the tortilla. Sprinkle the remaining cheese over the chicken, dividing it evenly between the two quesadillas. Fold the other half of the tortilla over the filling.
  4. Cook to Perfection: Melt a tablespoon of butter in a large skillet or pan over medium heat. Carefully place one assembled quesadilla in the pan. Cook for 2-3 minutes per side, until the tortilla is golden brown and crispy and the cheese is fully melted. Repeat with the second quesadilla.
  5. Serve and Enjoy: Remove the quesadilla from the pan and let it rest for a minute. Cut it into wedges, drizzle with extra hot honey, and serve immediately with your favorite toppings.

Notes

Tip 1: For the best melt, shred your own cheese from a block. Pre-shredded cheese contains anti-caking agents that can make it grainy.
Tip 2: Don't overheat the honey mixture, as it can become too thick or burn. A gentle warming is all that's needed.
