  • 1 large (400g) Italian baguette crusty and flour-dusted
  • 2 tbsp (30g) unsalted butter softened for toasting
  • 6 slices (150g) provolone cheese mild or sharp
  • 4 oz (113g) Genoa salami thinly sliced
  • 4 oz (113g) spicy capicola thinly sliced
  • 4 oz (113g) honey deli ham thinly sliced
  • 2 large (200g) vine-ripened tomatoes sliced thin
  • 1 tsp (2g) dried oregano plus extra for dusting
  • 1/2 cup (120ml) mayonnaise full fat recommended
  • 1 tbsp (15ml) red wine vinegar
  • 1 tsp (2g) garlic powder
  • 1/2 head (300g) iceberg lettuce finely shredded
  • 1/4 cup (60g) pickled pepperoncini chopped
  • 1/4 small (50g) red onion thinly sliced into rings

Equipment

  • 1 Serrated Bread Knife Essential for slicing baguette without crushing.
  • 1 Rimmed Baking Sheet For toasting the bread and melting cheese.
  • 1 Large Mixing Bowl To toss the grinder salad ingredients.

Method
 

Prep and Toast
  1. Slice the baguette lengthwise and spread butter on the cut sides. Toast under a broiler or on a griddle until golden-brown and crusty.
  2. Place provolone slices on the bottom half of the baguette and broil for 60 seconds until melted and bubbling.
Assemble the Stack
  1. Fold salami, capicola, and ham into ribbons and pile high onto the melted cheese. Dust with extra dried oregano.
  2. Place tomato slices over the meat and season lightly with salt and pepper.
The Grinder Salad
  1. In a bowl, combine mayo, vinegar, and garlic powder. Toss with shredded lettuce, onion rings, and chopped pepperoncini until heavily coated.
  2. Heaping the creamy salad onto the sandwich, close the bread, and press down firmly to combine the layers.

Notes

Always use a crusty baguette; a soft roll will become soggy too quickly.
For a spicier kick, add a teaspoon of red pepper flakes to the salad dressing.
