Italian Peach Cookies (Pesche Dolci): A Stunning Handcrafted Dessert

Ingredients
  

Main Ingredients
  • 3 ½ cups All-purpose flour 438g
  • ½ cup Unsalted butter 113g, softened
  • 1 cup Granulated white sugar 200g
  • 3 large Eggs Room temperature
  • 1 tbsp Baking powder 12g
  • 1 tsp Vanilla extract 5ml
  • 1 ½ cups Creamy filling 360ml, Pastry cream or ricotta filling
  • 1 cup Peach liqueur 240ml, or white rum
  • 2 drops Red and yellow food coloring To create peach gradient
  • 1 cup Coarse granulated sugar For coating
  • 24 fresh Mint leaves For garnish

Equipment

  • 1 Small melon baller or teaspoon Used for hollowing out the cookie domes.
  • 2 Pastry Brush For applying the food coloring gradient.
  • 2 Baking sheets with parchment paper

Method
 

Baking the Domes
  1. Cream softened butter and sugar until light. Add eggs and vanilla, mixing until smooth.
  2. Fold in flour and baking powder. Roll into 1-inch balls and bake at 350°F (175°C) for 12-15 minutes until very light golden-brown.
  3. While warm, use a melon baller to carefully scoop out a small hole in the flat bottom of each cookie.
Filling and Coloring
  1. Fill the hollowed centers with creamy filling and sandwich two domes together to form a sphere.
  2. Quickly dip one half of the cookie into yellow-tinted liqueur and the other into pink-tinted liqueur to create a gradient.
  3. Immediately roll the damp cookie in coarse granulated sugar until heavily encrusted.
  4. Tuck a fresh mint leaf into the side of the filling seam to resemble a peach leaf.

Notes

Hollow the cookies while warm to prevent cracking.
Use coarse sanding sugar for the best sparkling visual effect.
