Baking the Domes
- Cream softened butter and sugar until light. Add eggs and vanilla, mixing until smooth.
- Fold in flour and baking powder. Roll into 1-inch balls and bake at 350°F (175°C) for 12-15 minutes until very light golden-brown.
- While warm, use a melon baller to carefully scoop out a small hole in the flat bottom of each cookie.
Filling and Coloring
- Fill the hollowed centers with creamy filling and sandwich two domes together to form a sphere.
- Quickly dip one half of the cookie into yellow-tinted liqueur and the other into pink-tinted liqueur to create a gradient.
- Immediately roll the damp cookie in coarse granulated sugar until heavily encrusted.
- Tuck a fresh mint leaf into the side of the filling seam to resemble a peach leaf.
Notes
Hollow the cookies while warm to prevent cracking.
