Preparation
- Cook the farfalle in salted boiling water until al dente. Reserve 1 cup (240ml) of pasta water before draining.
- In a large skillet over medium-high heat, sear sausage slices in olive oil for 3-4 minutes per side until charred and crispy on the edges. Remove from pan.
- Add onion slivers and pepper strips to the skillet. Sauté for 5-7 minutes until softened and onions are translucent. Add garlic and oregano for the final minute.
- Return sausage to the pan. Add cooked pasta, remaining olive oil, and 1/2 cup (120ml) of pasta water. Toss vigorously to create a translucent sauce. Garnish with fresh parsley.
