  • 1 lb Farfalle (Bow Tie) Pasta 450g
  • 1 lb Italian Sausage Links 450g, sliced into 1/2 inch rounds
  • 1 large Yellow Onion Slivered
  • 1 medium Red Bell Pepper Sliced into strips
  • 1 medium Green Bell Pepper Sliced into strips
  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 4 cloves Garlic Thinly sliced
  • 1 tsp Dried Oregano 5g
  • 1/4 cup Fresh Parsley 15g, chopped

  • 1 Large pot For boiling pasta
  • 1 12-inch Skillet Stainless steel or cast iron preferred for searing

Method
 

Preparation
  1. Cook the farfalle in salted boiling water until al dente. Reserve 1 cup (240ml) of pasta water before draining.
  2. In a large skillet over medium-high heat, sear sausage slices in olive oil for 3-4 minutes per side until charred and crispy on the edges. Remove from pan.
  3. Add onion slivers and pepper strips to the skillet. Sauté for 5-7 minutes until softened and onions are translucent. Add garlic and oregano for the final minute.
  4. Return sausage to the pan. Add cooked pasta, remaining olive oil, and 1/2 cup (120ml) of pasta water. Toss vigorously to create a translucent sauce. Garnish with fresh parsley.

Notes

Always reserve your pasta water before draining; it is the key to the sauce texture.
Ensure the skillet is hot before adding sausage to get the perfect char.
