  • 1 loaf French Baguette Thick-cut on a diagonal
  • 1.5 lbs Roma Tomatoes Diced (approx 680g)
  • 4 cloves Fresh Garlic 2 minced, 2 whole for rubbing
  • 1/2 cup Fresh Basil Chiffonade cut (approx 15g)
  • 1/4 cup Extra Virgin Olive Oil 60ml
  • 2 tbsp Balsamic Glaze 30ml
  • 1 tsp Sea Salt 6g
  • 1/2 tsp Black Pepper 1g

Equipment

  • 1 Grill Pan To achieve visible grill marks
  • 1 Serrated Knife For slicing the baguette without crushing
  • 2 Mixing Bowl

Method
 

Prepare the Tomatoes
  1. Dice the Roma tomatoes into 1/4-inch pieces. Place in a strainer, toss with salt, and let drain for 10 minutes to prevent sogginess.
  2. Combine the drained tomatoes with minced garlic, 2 tablespoons of olive oil, and the basil chiffonade. Toss gently and let sit at room temperature.
Toast the Bread
  1. Brush baguette slices with olive oil. Grill on a hot grill pan for 2-3 minutes per side until deep golden-brown grill marks appear.
  2. While bread is hot, rub a whole garlic clove over the surface of each slice to infuse flavor.
Assembly
  1. Spoon the tomato mixture generously onto each slice. Finish with a zigzag drizzle of balsamic glaze and serve immediately.

Notes

Use Roma tomatoes for less moisture.
Rub the garlic on the bread while it is still warm to melt the oils.
