  • 4 cups (400g) Green Cabbage finely shredded
  • 2 cups (200g) Purple Cabbage finely shredded
  • 1 cup (125g) Carrots julienned into matchsticks
  • 3 medium Jalapeños sliced into thin rounds with seeds
  • 1/2 cup (15g) Fresh Cilantro chopped for topping
  • 1/2 cup (120g) Mayonnaise
  • 1/4 cup (60g) Sour Cream
  • 3 tbsp (45ml) Lime Juice freshly squeezed
  • 1 tbsp (15g) Honey or agave
  • 1 tsp (5g) Sea Salt

Method
 

Prepare the Dressing
  1. In a mixing bowl, whisk mayonnaise, sour cream, lime juice, and honey until smooth and glossy.
  2. Add salt and pepper to the dressing and stir to combine.
Assemble the Slaw
  1. Place shredded green cabbage, purple cabbage, and julienned carrots in a large ceramic bowl and toss.
  2. Scatter the thin jalapeño rounds over the cabbage mixture, ensuring seeds are visible for a rustic look.
  3. Pour the dressing over the vegetables and toss until glossy. Top with chopped cilantro just before serving.

Notes

Chill the vegetables before shredding for extra crunch.
Dress the slaw no more than 20 minutes before serving to prevent sogginess.
