Preparation
- Gently fold chopped herbs and seasonings into cold ground turkey. Shape into 4 patties with a center dimple.
- Butter the split brioche buns and toast in a skillet until golden brown and slightly crisp.
Cooking and Assembly
- Heat oil in a cast iron skillet over medium-high heat. Sear patties for 4-5 minutes until brown edges appear. Flip, add cheese, and cover to melt.
- Spread garlic mayo on buns. Layer the patty, arugula, and red onion. Top with more mayo and the offset bun.
Notes
Use a thermometer to ensure 165°F (74°C) without overcooking.
