  • 1 lb (450g) Ground Turkey 85/15 blend recommended
  • 2 tbsp (8g) Fresh Parsley Finely chopped
  • 1 tbsp (4g) Fresh Chives Finely chopped
  • 4 slices White Cheese Swiss, Havarti, or White Cheddar
  • 4 Brioche Buns Split and toasted
  • 1 cup (20g) Fresh Arugula
  • 1/2 Red Onion Thinly sliced
  • 1/2 cup (120ml) Mayonnaise For garlic herb mayo
  • 1 clove Garlic Grated or minced

Method
 

Preparation
  1. Gently fold chopped herbs and seasonings into cold ground turkey. Shape into 4 patties with a center dimple.
  2. Butter the split brioche buns and toast in a skillet until golden brown and slightly crisp.
Cooking and Assembly
  1. Heat oil in a cast iron skillet over medium-high heat. Sear patties for 4-5 minutes until brown edges appear. Flip, add cheese, and cover to melt.
  2. Spread garlic mayo on buns. Layer the patty, arugula, and red onion. Top with more mayo and the offset bun.

Notes

Use a thermometer to ensure 165°F (74°C) without overcooking.
Don't press the patties while searing to keep them juicy.
