  • 1 lb Ground Turkey 85/15 blend (450g)
  • 1 tsp Kosher Salt (6g)
  • 1/2 tsp Black Pepper (2g)
  • 1 tbsp Avocado Oil (15ml)
  • 4 slices Yellow Cheddar Cheese Square slices
  • 4 units Brioche Buns Split and buttered
  • 4 leaves Green Leaf Lettuce Ruffled edges
  • 4 slices Vine-Ripened Tomato Thick horizontal slices

Method
 

Patty Preparation
  1. Divide ground turkey into 4 equal portions. Gently hand-press into thick patties about 1 inch (2.5cm) thick. Create a small thumbprint in the center.
  2. Generously season both sides of the turkey patties with salt and pepper immediately before cooking.
Searing and Melting
  1. Heat oil in a cast iron skillet over medium-high heat. Sear patties for 5-6 minutes until a deep brown crust forms. Flip.
  2. Add a slice of cheddar to each patty. Add a teaspoon of water to the pan and cover with a lid for 30 seconds to create drooping corners.
Assembly
  1. Butter and toast brioche buns until golden-brown.
  2. Place seared patty on the bottom bun. Top with ruffled green leaf lettuce and a thick slice of tomato. Angle the top bun slightly for presentation.

Notes

Don't overmix the meat or it will become tough.
Ensure the internal temperature reaches 165°F (74°C) for safety.
