Main Ingredients
  • 1.5 cups Almond Flour Super-fine blanched (168g)
  • 5 tbsp Psyllium Husk Powder 45g
  • 2 tsp Baking Powder 10g
  • 1 tsp Sea Salt 6g
  • 3 large Egg Whites 90ml
  • 2 tsp Apple Cider Vinegar 10ml
  • 1 cup Boiling Water 240ml
  • 1 large Egg Yolk For glaze
  • 1 tbsp White Sesame Seeds 9g
  • 1 tbsp Fresh Parsley Finely chopped (4g)

Equipment

  • 1 Mixing Bowl Large size for dry ingredients
  • 1 Hand Mixer To properly hydrate psyllium husk
  • 1 Baking Sheet Lined with parchment paper
  • 1 Pastry Brush For the egg wash glaze

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). In a large bowl, whisk together almond flour, psyllium husk, baking powder, and salt.
  2. Mix in egg whites and apple cider vinegar until a crumbly paste forms.
Activation and Shaping
  1. Pour boiling water into the bowl. Mix on medium speed for 1-2 minutes until dough is thick and elastic. Let rest for 5 minutes.
  2. Divide into 6 balls. Place on parchment paper and flatten slightly into bun shapes.
Glazing and Baking
  1. Brush tops with whisked egg yolk. Sprinkle with sesame seeds and finely chopped parsley.
  2. Bake for 45-50 minutes until golden brown and firm. Cool completely before slicing horizontally.

Notes

Ensure water is at a rolling boil to properly activate the psyllium husk.
Cool completely on a wire rack to prevent a gummy interior texture.
