  • 1 lb Ground Italian Sausage crumbled and browned
  • 1 cup Green Bell Pepper sliced and softened
  • 1 cup Red Bell Pepper sliced and softened
  • 1.5 cups Sugar-Free Marinara Sauce thick and zesty
  • 1 tbsp Extra Virgin Olive Oil for sautéing
  • 2 cups Mozzarella Cheese shredded, whole milk
  • 1 tsp Dried Oregano for garnish
  • 0.5 tsp Crushed Red Pepper Flakes to taste

Equipment

  • 1 Cast Iron Skillet Used for browning sausage and peppers.
  • 2 Ceramic Bowls Must be oven-safe for broiling.

Method
 

Prepare the Base
  1. In a large skillet over medium-high heat, brown the Italian sausage until deeply caramelized and crumbled. Remove sausage and set aside, keeping the fat in the pan.
  2. Add sliced red and green peppers to the skillet. Sauté in the sausage fat (adding olive oil if needed) until softened and slightly translucent.
  3. Return the sausage to the pan. Pour in the sugar-free marinara sauce and simmer for 3-5 minutes until the mixture is thick and hot.
Assemble and Broil
  1. Transfer the mixture to oven-safe ceramic bowls. Top each with a generous layer of mozzarella cheese.
  2. Place under the broiler for 2-3 minutes until the cheese is bubbly and shows distinct golden-brown toasted spots.
  3. Remove from oven and immediately sprinkle with dried oregano and red pepper flakes.

Notes

Draining excess grease from the sausage prevents the marinara from becoming oily.
Use whole-milk mozzarella for the best blistering results under the broiler.
