Prepare the Base
- In a large skillet over medium-high heat, brown the Italian sausage until deeply caramelized and crumbled. Remove sausage and set aside, keeping the fat in the pan.
- Add sliced red and green peppers to the skillet. Sauté in the sausage fat (adding olive oil if needed) until softened and slightly translucent.
- Return the sausage to the pan. Pour in the sugar-free marinara sauce and simmer for 3-5 minutes until the mixture is thick and hot.
Assemble and Broil
- Transfer the mixture to oven-safe ceramic bowls. Top each with a generous layer of mozzarella cheese.
- Place under the broiler for 2-3 minutes until the cheese is bubbly and shows distinct golden-brown toasted spots.
- Remove from oven and immediately sprinkle with dried oregano and red pepper flakes.
Notes
Draining excess grease from the sausage prevents the marinara from becoming oily.
