Ingredients
  

Main Ingredients
  • 1.5 lbs Chicken Thighs Boneless, skinless, cut into bite-sized pieces
  • 2 cups Jasmine Rice 400g, rinsed
  • 1/4 cup Gochujang Paste 60ml
  • 3 tbsp Soy Sauce 45ml
  • 2 tbsp Honey 30g
  • 1 tbsp Sesame Oil 15ml
  • 2 large Carrots Julienned
  • 1 medium English Cucumber Thinly sliced
  • 1 cup Edamame 150g, shelled and steamed
  • 1 tbsp Sesame Seeds Toasted
  • 3 whole Green Scallions Finely sliced

Equipment

  • 1 Cast Iron Skillet Essential for creating charred edges.
  • 1 Chef's Knife For julienning carrots and slicing cucumbers.

Method
 

Preparation
  1. Combine rinsed jasmine rice with 2.5 cups water and salt. Bring to boil, simmer covered for 15 minutes, then fluff.
  2. Julienne carrots, slice cucumbers, and steam edamame until bright green. Set aside.
  3. Whisk gochujang, soy sauce, honey, sesame oil, garlic, and ginger until glossy and smooth.
Cooking and Assembly
  1. Sear chicken thighs in a hot skillet until golden and charred on the edges. Stir in the glaze until thick and glossy.
  2. Divide rice into bowls. Top with chicken and sections of carrots, cucumbers, and edamame. Garnish with sesame seeds and scallions.

Notes

Use chicken thighs instead of breasts for better moisture and char.
Rinse your rice 3-4 times to ensure it stays fluffy and separate.
