Ingredients
  

  • 1 tbsp Olive Oil
  • 1 lb Sweet Italian Sausage casings removed
  • 1 large Yellow Onion chopped
  • 4 cloves Garlic minced
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Oregano
  • 1/4 tsp Red Pepper Flakes or more, to taste
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper freshly ground
  • 28 oz Canned Crushed Tomatoes
  • 4 cups Beef Broth
  • 2 cups Water
  • 8 oz Mafalda Pasta or broken lasagna noodles
  • 1 cup Whole Milk Ricotta Cheese
  • 1/2 cup Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese divided
  • 1/4 cup Fresh Basil chopped, for garnish

Method
 

  1. Brown the Sausage: In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
  2. Sauté the Aromatics: Add the chopped onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Build the Flavor Base: Stir in the tomato paste, dried oregano, red pepper flakes, salt, and pepper. Cook for 1-2 minutes, stirring constantly, until the tomato paste darkens slightly.
  4. Simmer the Soup: Pour in the crushed tomatoes, beef broth, and water. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for at least 15 minutes to allow the flavors to meld.
  5. Cook the Pasta: Uncover the soup and bring it back to a gentle boil. Stir in the Mafalda pasta and cook according to package directions until al dente, usually about 8-10 minutes. Stir occasionally to prevent the pasta from sticking.
  6. Prepare the Topping & Serve: While the pasta cooks, mix the ricotta, mozzarella, and half of the Parmesan cheese in a small bowl. Once the soup is ready, ladle it into bowls. Top each serving with a generous dollop of the ricotta mixture, a sprinkle of the remaining Parmesan, and fresh basil. Serve immediately.

Notes

For best results with leftovers, cook the pasta separately and add it to individual bowls when serving. This prevents the pasta from becoming too soft.
Feel free to substitute the Italian sausage with ground turkey or ground beef, but you may need to add extra Italian seasoning.
A splash of heavy cream at the end will make the soup even richer and more decadent.
