- Rinse the jasmine rice until water runs clear. Combine with 2.25 cups water and a pinch of salt. Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes. Let sit for 5 minutes then fluff with a fork.
- Pat chicken cubes dry and season with salt. Heat oil in a large skillet over medium-high heat. Add chicken in a single layer and sear for 3-4 minutes per side until golden-brown charred edges appear. Remove chicken and set aside.
- In the same pan, add garlic and ginger for 30 seconds. Whisk mango puree, soy sauce, lime juice, and cornstarch together, then pour into the pan. Stir until the sauce thickens into a glossy, translucent vibrant orange glaze.
- Add the chicken back into the skillet and toss to coat heavily in the glaze. Serve in white ceramic bowls over the rice and garnish generously with sesame seeds, scallions, and chili flakes.
