Preparation
- Toss chicken cubes with 2 tbsp olive oil, lemon juice, oregano, salt, and pepper. Marinate for 20 minutes.
- Grate half the cucumber and squeeze out liquid. Mix with yogurt, garlic, and salt until thick.
Cooking & Assembly
- Heat skillet with remaining oil. Sear chicken in a single layer until deep golden-brown (about 7-8 minutes total).
- Place tortillas over an open gas flame or in a hot pan for 10-15 seconds per side until lightly charred.
- Fill tortillas with chicken. Top with a dollop of tzatziki, diced tomatoes, diced cucumber, red onions, feta, and parsley.
Notes
For extra flavor, add lemon zest to the marinade.
