  • 3-4 oz (85-113g) roasted turkey breast thinly sliced
  • 2-3 slices Swiss cheese approx 60-90g
  • 1 cup (125g) all-purpose flour
  • 1 tsp (5g) baking powder creates bubbly texture
  • 1/2 cup (120ml) cold water or club soda must be very cold
  • 1/2 tsp (3g) kosher salt
  • 2-3 cups (480-720ml) vegetable oil for frying
  • 2 tbsp (15g) powdered sugar for dusting
  • 1/4 cup (60ml) raspberry jam glossy, for dipping

  • 1 Wire Cooling Rack To prevent sogginess

Method
 

Assembly
  1. Layer one slice of Swiss cheese, the turkey, the ham, and the second slice of Swiss cheese between two slices of thick white bread.
Battering and Frying
  1. Whisk flour, baking powder, salt, and cold water until a smooth, thick batter forms.
  2. Dip the entire sandwich into the batter, ensuring all sides are completely encased to seal in the cheese.
  3. Carefully place in 350°F (175°C) oil. Fry for 2-3 minutes per side until deep golden-brown and bubbly. Look for a firm, crispy crust.
Finishing
  1. Drain on a wire rack for 60 seconds. Slice into triangles and dust generously with powdered sugar.
  2. Serve immediately with a side of glossy raspberry jam for dipping.

Notes

Ensure the oil is exactly 350°F (175°C) before frying to prevent sogginess.
Use club soda instead of water for an even bubblier batter texture.
