  • 4 tbsp (56g) Unsalted Butter Melted
  • 16 oz (450g) Cream Cheese Softened to room temperature
  • 1 cup (240ml) Heavy Cream Cold
  • 1 package (3.4oz) Instant Vanilla Pudding Mix Dry mix only
  • 0.5 cup (65g) Powdered Sugar
  • 1 cup (120g) Mashed Ripe Banana Approx 2 small bananas
  • 2 Fresh Bananas Sliced into rounds for layering
  • 1 cup (240ml) Heavy Cream For topping
  • 6 whole Vanilla Wafer Cookies For garnish

Method
 

Prepare the Base
  1. Combine 1.5 cups (150g) of wafer crumbs with 4 tbsp (56g) melted butter. Press firmly into the bottom of 6 jars.
Create the Cheesecake
  1. Beat softened cream cheese and powdered sugar until smooth. Mix in the dry pudding mix and banana puree until pale yellow.
  2. In a separate bowl, whip 1 cup (240ml) heavy cream to stiff peaks. Gently fold it into the banana mixture.
Assemble the Jars
  1. Place banana slices against the glass walls. Fill with cheesecake custard and smooth the tops.
  2. Pipe a stiff swirl of whipped cream on each. Add a whole cookie and a dusting of crumbs.

Notes

Use lemon juice on banana slices to prevent browning.
Ensure cream cheese is room temperature to avoid lumps in the smooth filling.
