  • 1 cup Self-Rising Flour 125g, do not substitute with All-Purpose without leaveners
  • 1 cup Granulated Sugar 200g, for the batter
  • 1 cup Whole Milk 240ml
  • 4 cups Sliced Peaches 680g, fresh or canned
  • 1 cup Granulated Sugar 200g, for the filling
  • 1 cup Water 240ml

  • 1 9x13 inch white ceramic baking dish Ceramic provides even heat distribution for crisp edges.
  • 1 Heavy-Bottomed Saucepan Used for simmering peaches and creating the amber syrup.

Method
 

Preparation
  1. In a saucepan, combine peaches, 1 cup sugar, and water. Bring to a boil then simmer for 10 minutes until peaches are softened and syrup is amber.
  2. Preheat oven to 350°F (175°C). Place butter in a white ceramic dish and melt in the oven until sizzling.
  3. Whisk flour, 1 cup sugar, and milk together. Pour this mixture over the melted butter. Do not stir.
  4. Spoon peaches and syrup over the batter. Bake for 40-45 minutes until the crust is golden-brown and the juices bubble through.

Notes

Use high-quality peaches for a more vibrant orange-yellow color.
Do not stir the layers to ensure the cake-like crust rises through the fruit correctly.
