Sandwich Components
  • 2 slices Sourdough bread 1-inch thick-cut
  • 4 oz (113g) Brie cheese thick wedges
  • 1 medium Peach sliced into 1/2-inch wedges
  • 2 tbsp (30g) Salted butter room temperature
  • 3-4 sprigs Fresh thyme leaves stripped
  • 1 tbsp (15ml) Honey golden/wildflower
  • 1 tsp (4g) Granulated sugar for searing peaches

Equipment

  • 1 Cast Iron Skillet For even heat distribution and a deep golden-brown crust.
  • 1 Metal Spatula To flip the sandwich carefully without losing the fruit layers.
  • 1 Serrated Knife For clean cuts through the sourdough.

Method
 

Prep and Sear
  1. Dust peach wedges with sugar. In a small skillet over medium-high heat, sear peaches in a tiny bit of butter for 2 minutes per side until dark caramelized edges appear.
  2. Spread salted butter generously from edge to edge on one side of each sourdough slice.
Assembly and Grilling
  1. On the unbuttered side, layer Brie wedges, seared peaches, thyme leaves, and a honey drizzle. Close with the second slice, butter-side out.
  2. Place in a skillet over medium-low heat. Grill for 4-5 minutes per side until the bread is a deep golden-brown and Brie is oozing from the sides.

Notes

Use a heavy pan to press the sandwich for a better melt.
Don't rush the heat; medium-low ensures the cheese melts before the bread burns.
