Prep and Sear
- Dust peach wedges with sugar. In a small skillet over medium-high heat, sear peaches in a tiny bit of butter for 2 minutes per side until dark caramelized edges appear.
- Spread salted butter generously from edge to edge on one side of each sourdough slice.
Assembly and Grilling
- On the unbuttered side, layer Brie wedges, seared peaches, thyme leaves, and a honey drizzle. Close with the second slice, butter-side out.
- Place in a skillet over medium-low heat. Grill for 4-5 minutes per side until the bread is a deep golden-brown and Brie is oozing from the sides.
Notes
Use a heavy pan to press the sandwich for a better melt.
