Donut Dough
  • 3 1/2 cups All-Purpose Flour 435g
  • 1 cup Whole Milk 240ml, warmed to 110°F
  • 2 1/4 tsp Active Dry Yeast 7g
  • 1/4 cup Granulated Sugar 50g
  • 4 tbsp Unsalted Butter 56g, melted
  • 1 large Egg Room temperature
Toppings
  • 8 oz Cream Cheese 225g, softened
  • 1/2 cup Powdered Sugar 60g
  • 3 large Fresh Peaches 450g, diced
  • 1/3 cup Honey 115g
  • 1/2 cup Graham Cracker Crumbs 60g

Equipment

  • 1 Dutch Oven or Deep Fryer For frying the donuts
  • 1 Stand Mixer With dough hook attachment
  • 1 Donut Cutter 3-inch diameter
  • 1 Candy Thermometer To monitor oil temperature

Method
 

Dough Preparation
  1. Combine warm milk, yeast, and a pinch of sugar. Let sit for 10 minutes until foamy.
  2. Add remaining dough ingredients and knead with a dough hook for 5 minutes until smooth.
  3. Cover and let rise in a warm place for 1.5 hours until doubled in size.
Frying and Assembly
  1. Roll dough to 1/2 inch thick, cut into circles, and let rest for 30 minutes.
  2. Fry in 350°F (175°C) oil for 90 seconds per side until deep golden-brown.
  3. Simmer peaches and honey until syrupy. Whip cream cheese and powdered sugar until smooth.
  4. Spread cream cheese on cooled donuts, top with peaches, and garnish with graham crumbs.

Ensure peaches are fully cooled before topping to prevent the cheesecake spread from melting.
Use a thermometer to maintain oil at exactly 350°F for the best texture.
