- Cream butter and sugar, mix in flour. Press 2/3 of the mixture into the pan and par-bake at 350°F (175°C) for 12-15 minutes until pale golden and set.
- Simmer peach chunks with cornstarch and sugar in a saucepan until the mixture is thick, jammy, and orange-yellow.
- Spread fruit over the base. Mix oats into remaining crust dough to form heavy chunks and sprinkle over fruit. Bake 25-30 minutes until the top is golden brown.
- Cool completely, then drizzle with warmed honey in thin lines across the top.
