Ingredients
  

Main Ingredients
  • 2 cups (200g) Dark chocolate sandwich cookies Crushed into fine crumbs
  • 5 tbsp (70g) Unsalted butter Melted
  • 24 oz (680g) Full-fat cream cheese Room temperature
  • 1 cup (250g) Creamy peanut butter Not natural style
  • 1 cup (200g) Granulated sugar
  • 3 large Eggs Room temperature
  • 1 tsp (5ml) Vanilla extract
  • 4 oz (115g) Dark chocolate Finely chopped
  • 1/2 cup (120ml) Heavy cream
  • 1 cup (150g) Reese's Peanut Butter Cups Chopped

Equipment

  • 1 9-inch springform pan
  • 1 Electric Hand Mixer
  • 1 Large roasting pan For the water bath

Method
 

Prepare the Crust
  1. Combine crushed cookies and melted butter. Press into a 9-inch springform pan.
  2. Bake at 350°F (175°C) for 8 minutes, then cool completely.
Make the Filling
  1. Beat cream cheese and sugar until smooth and fluffy.
  2. Mix in peanut butter and vanilla until a pale tan color is achieved.
  3. Mix in eggs one at a time on low speed until just combined.
Bake and Cool
  1. Place pan in a water bath and bake at 325°F (160°C) for 60 minutes.
  2. Cool in the oven with the door cracked for 1 hour, then refrigerate for at least 6 hours.
Decorate
  1. Pour warm ganache over the center, allowing it to drip down the sides.
  2. Top with chopped Reese's and a final peanut butter drizzle.

Notes

Ensure all dairy ingredients are at room temperature.
Use a water bath to prevent cracking on the surface.
