  • 1/2 cup Pistachio Paste 100% pure, unsweetened
  • 1 cup Heavy Whipping Cream Cold, 36% milkfat
  • 1.5 cups Powdered Sugar Sifted
  • 1/4 cup Finely Ground Pistachios Raw, pulsed to dust
  • 2 tbsp Crushed Roasted Pistachios For garnish
  • 1 tsp Vanilla Bean Paste

Method
 

Preparation
  1. In a chilled bowl, combine the mascarpone and pistachio paste. Mix on low speed until the color is a uniform pale green and the mixture is smooth.
  2. Slowly add the heavy cream and whip on medium-high until soft peaks form. Sift in powdered sugar and vanilla, then whip until thick and velvet-smooth.
  3. Fold in the finely ground pistachios by hand. Use an offset spatula to create deep swirls in a bowl, then garnish with crushed roasted pistachios.

Notes

Keep all ingredients very cold to prevent the mascarpone from breaking.
Use high-quality pistachio paste for the best natural green color.
