  • ¾ cup Light Brown Sugar 150g
  • 1 large Egg Room temperature
  • 1 tbsp Vanilla Extract 15ml
  • 2 ¼ cups All-Purpose Flour 280g
  • 1 tsp Baking Soda 5g
  • ½ tsp Sea Salt 3g
  • 2 cups Puffed Rice Cereal 60g, toasted
  • 1 ½ cups Semi-Sweet Chocolate Chips 255g, large morsels

Method
 

Preparation
  1. Toast puffed rice cereal at 300°F (150°C) for 5-7 minutes until slightly golden. Set aside to cool.
  2. In a stand mixer, cream butter, granulated sugar, and brown sugar at medium-high speed until light and fluffy (about 3 minutes).
  3. Add the egg and vanilla extract, beating until fully incorporated and the mixture looks glossy.
  4. Whisk flour, baking soda, and salt. Add to the butter mixture on low speed just until combined.
  5. Gently fold in the toasted cereal and chocolate chips by hand using a spatula to ensure grains remain whole.
  6. Scoop dough onto lined sheets. Bake at 350°F (175°C) for 10-12 minutes until edges are charred/golden but centers are soft.
