- Line a large baking sheet with parchment paper. Arrange 36 Ritz crackers in a single layer.
- Spoon approximately 1 teaspoon of peanut butter onto the center of each of the 36 crackers. Top with the remaining 36 crackers, pressing gently to create sandwiches.
- Place the baking sheet in the refrigerator to chill for at least 10 minutes.
- In a microwave-safe bowl, melt the chocolate wafers in 30-second intervals, stirring between each, until smooth. If using chocolate chips, add 1 tsp of coconut oil to help it melt smoothly.
- Remove the chilled sandwiches from the refrigerator. Using a fork, dip one sandwich at a time into the melted chocolate, turning to coat completely. Lift the cookie with the fork and tap it gently on the side of the bowl to allow excess chocolate to drip off.
- Place the coated cookie back on the parchment paper and immediately top with festive sprinkles.
- Repeat with the remaining sandwiches. Once all are dipped and decorated, return the baking sheet to the refrigerator for another 10-15 minutes, or until the chocolate is fully set.

Tip 1: Don't skip chilling the peanut butter sandwiches before dipping. This helps them stay together in the warm chocolate.
