  • 1 cup (227g) salted butter softened to room temperature
  • 2 heads garlic whole bulbs for roasting
  • 1 tbsp (15ml) extra virgin olive oil for roasting garlic
  • 1/4 cup (15g) fresh Italian parsley finely chopped
  • 1 tsp (2g) crushed red pepper flakes vibrant red flakes
  • 1/2 tsp (1g) coarse black pepper for texture
  • 1 tsp lemon zest approximately one lemon

Equipment

  • 1 Aluminum foil For roasting garlic
  • 1 Small White Ceramic Bowl For serving
  • 1 Microplane For lemon zesting

Method
 

Roast the Garlic
  1. Preheat oven to 400°F (200°C). Slice the top off the garlic heads, drizzle with olive oil, and wrap tightly in aluminum foil.
  2. Roast for 35-40 minutes until the cloves are caramelized brown and soft. Cool completely before squeezing cloves out of the skins.
Assemble the Butter
  1. In a medium bowl, combine softened butter with the roasted garlic cloves. Smash the cloves gently with a spatula to integrate.
  2. Add finely chopped parsley, red pepper flakes, black pepper, and lemon zest. Fold until ingredients are evenly distributed and oil trails appear.
  3. Transfer to a white ceramic bowl. Garnish with additional parsley and chili flakes for a professional visual finish.

Notes

Ensure butter is naturally softened, not microwaved, for the best matte texture.
Keep parsley completely dry before chopping to maintain vibrant green color.
