  2. Wash and dry the sweet potatoes well. Slice them into uniform ¼-inch thick rounds.
  3. In a large bowl, toss the sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  4. Arrange the seasoned rounds in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure they get crispy.
  5. Roast for 20-30 minutes, flipping the rounds halfway through, until they are tender and the edges are golden brown and caramelized.
