Roasting the Vegetables
- Preheat your oven to 425°F (220°C). This high heat is essential for the charred zucchini and blistered tomatoes.
- On a large rimmed baking sheet, toss the zucchini, red onion wedges, and cherry tomatoes with 2 tbsp (30ml) of olive oil and salt. Ensure they are in a single layer.
- Roast for 20-25 minutes until the tomatoes burst and the zucchini shows dark brown caramelization and grill marks.
Pasta and Dressing
- Boil the orzo in salted water for 8-9 minutes until al dente. Drain, but do not rinse.
- Whisk the remaining olive oil, lemon juice, zest, and pepper in a small bowl until a glossy sheen forms.
Assembly
- In a large white ceramic bowl, toss the warm orzo with the roasted vegetables and dressing.
- Fold in the finely chopped parsley and serve warm or at room temperature.
