Ingredients

For the Salisbury Steaks
  • 1.5 lbs lean ground beef 85/15 or 90/10 recommended
  • 1/2 cup panko breadcrumbs
  • 1 large egg lightly beaten
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Mushroom Gravy
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 large yellow onion thinly sliced
  • 8 oz cremini mushrooms sliced
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 2.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dijon mustard

Equipment

  • 1 Large Skillet
  • 1 Mixing Bowl

Method

  1. In a large bowl, gently combine ground beef, breadcrumbs, egg, 1 tbsp Worcestershire sauce, ketchup, onion powder, garlic powder, salt, and pepper. Do not overmix. Shape into four 3/4-inch thick oval patties.
  2. Heat olive oil in a large skillet over medium-high heat. Sear patties for 3-4 minutes per side until a deep brown crust forms. Remove from skillet and set aside.
  3. Reduce heat to medium. Add butter to the skillet. Sauté sliced onions until softened (5-6 minutes). Add sliced mushrooms and cook until browned (7-8 minutes). Stir in minced garlic and cook for 1 more minute.
  4. Sprinkle flour over the vegetables and stir for one minute. Slowly whisk in the beef broth, 1 tbsp Worcestershire sauce, and Dijon mustard until smooth.
  5. Bring the gravy to a simmer, allowing it to thicken (about 3-5 minutes).
  6. Return the seared patties to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the patties are cooked through. Serve hot with gravy.

Notes

For the best flavor, use a good quality beef broth and don't be shy about browning the patties and mushrooms well.
Serve immediately over mashed potatoes or egg noodles.
