Slow Cooker Pepper Steak: Tender Beef and Glossy Savory Sauce

Main Ingredients
  • 1.5 lbs Flank Steak Sliced into thin strips (680g)
  • 1 large Green Bell Pepper Sliced into strips (150g)
  • 1 large Red Bell Pepper Sliced into strips (150g)
  • 1 medium Yellow Onion Sliced into strips (110g)
Savory Sauce
  • 0.5 cup Soy Sauce Low-sodium (120ml)
  • 0.25 cup Light Brown Sugar Packed (50g)
  • 1 tbsp Sesame Oil Toasted (15ml)
  • 1 tbsp Fresh Ginger Minced (8g)
  • 3 cloves Garlic Minced (9g)
Thickener
  • 0.25 cup Cornstarch 32g
  • 2 tbsp Cold Water 30ml

Equipment

  • 1 Slow Cooker 6-quart or larger
  • 1 Cast Iron Skillet For searing the beef

Method
 

Preparation
  1. Heat oil in a skillet over high heat. Sear beef strips in batches until deep brown (1-2 mins per side). Transfer to slow cooker.
  2. Whisk soy sauce, brown sugar, sesame oil, ginger, and garlic. Pour over beef. Add onion strips. Cook on LOW for 4-5 hours.
  3. 45 minutes before serving, stir in red and green bell pepper slices.
  4. Mix cornstarch and water. Stir into slow cooker. Cook on HIGH for 20 minutes until sauce is thick and glossy.
  5. Spoon over steamed jasmine rice and garnish with sesame seeds and scallions.

Notes

Ensure you sear the beef in batches to prevent steaming.
Add peppers late to keep them bright and only slightly wilted.
