  • 1.5 cups Sharp Cheddar Cheese Freshly shredded
  • 1/2 cup Mayonnaise
  • 2 tbsp Ketchup
  • 1 tbsp Yellow Mustard
  • 1 tsp White Vinegar
  • 1 small White Onion Finely chopped
  • 4 medium Dill Pickles Neatly diced
  • 1 tsp White Sesame Seeds Toasted

  • 1 Large Rimmed Baking Sheet Essential for crispy potatoes
  • 1 Cast Iron Skillet Used for searing the beef crumbles

Method
 

Potato Roasting
  1. Preheat oven to 425°F (220°C). Toss cubed potatoes with avocado oil, salt, and garlic powder.
  2. Spread on a baking sheet and roast for 25-30 minutes until edges are golden-brown and blistered.
Beef and Cheese
  1. In a hot skillet, sear ground beef without moving for 3 minutes. Break into crumbles and cook until browned.
  2. Sprinkle shredded cheddar over the beef and cover with a lid for 1 minute until gooey.
Assembly
  1. Place a foundation of roasted potatoes in a bowl. Top with cheesy beef crumbles.
  2. Add diced pickles, chopped onions, and sesame seeds. Drizzle the special sauce in a zigzag pattern.

Notes

Pat the potatoes dry with a paper towel before oiling to ensure maximum crispiness.
Soak the white onions in ice water for 5 minutes to mellow their bite while keeping them crunchy.
