Prepare the Filling
- Wilt the baby spinach in a pan over medium heat until dark green, then squeeze all moisture out using paper towels.
- In a bowl, combine the dried spinach with ricotta, a pinch of salt, and pepper until thick and creamy.
Stuff and Sear
- Slice a pocket into each chicken breast and stuff with 2-3 tbsp of the filling.
- Sear chicken in olive oil and butter in a hot skillet for 3-4 minutes per side until a deep golden-brown skin forms.
Bake to Perfection
- Place chicken in a baking dish, top with mozzarella, and bake at 400°F (200°C) for 12-15 minutes.
- Broil for 2 minutes until cheese has golden spots. Garnish with parsley and red pepper flakes before serving.
