Ingredients

Ingredients
  • 1 lb Sirloin or Ribeye Steak cut into 1-inch cubes
  • 8 oz Brown Mushrooms sliced cremini or baby bella
  • 1.5 cups Orzo Pasta dry, uncooked
  • 4 cloves Garlic minced
  • 3 cups Beef Broth low sodium
  • 0.5 cup Heavy Cream 120ml for velvety texture
  • 2 tbsp Avocado Oil or other high-smoke point oil
  • 2 tbsp Unsalted Butter for sautéing mushrooms
  • 0.25 cup Fresh Parsley finely chopped
  • 1 tsp Cracked Black Pepper coarse grind

Equipment

  • 1 Cast Iron Skillet Ensures the best caramelization for the beef.
  • 1 Wooden spoon Essential for deglazing and stirring the creamy sauce.

Method

Sear the Steak
  1. Heat oil in a large skillet over medium-high heat. Add steak bites in a single layer and sear for 2-3 minutes until a deep brown crust forms. Remove and set aside.
Prepare the Orzo
  1. In the same skillet, melt butter and sauté sliced brown mushrooms until golden. Add minced garlic and cook for 30 seconds.
  2. Add orzo and broth. Simmer covered for 8-10 minutes until the liquid is mostly absorbed and pasta is tender.
Finish and Garnish
  1. Stir in heavy cream and fresh parsley. Fold the steak bites back in to warm through. Garnish with extra parsley and coarse cracked black pepper.

Notes

Do not overcrowd the pan during the steak sear to ensure a proper crust.
Use a high-quality coarse pepper mill for the best visual and flavor impact.
