Ingredients

Main Ingredients
  • 1 large (450g) Golden Sponge Cake Cut into 1-inch cubes
  • 2 packages (100g each) Instant Banana Pudding Mix
  • 3 cups (720ml) Whole Milk Must be cold
  • 3 large Bananas Ripe, sliced into rounds
  • 1 lb (450g) Fresh Strawberries Sliced, plus extra halves for garnish
  • 2 cups (480ml) Heavy Whipping Cream Cold
  • 1/4 cup (30g) Powdered Sugar

Equipment

  • 1 9x13 Clear Glass Baking Dish Essential for showing off the layers
  • 1 Offset spatula For texturing the whipped cream

Method

Assembly Process
  1. Cube the golden sponge cake into 1-inch pieces and arrange them in an even layer at the bottom of a clear glass 9x13 dish.
  2. Whisk pudding mix and whole milk for 2 minutes. Fold in sliced bananas and pour over the cake cubes, ensuring even coverage.
  3. Arrange a vibrant row of thinly sliced strawberries over the pudding layer until completely covered.
  4. Whip heavy cream and sugar until stiff peaks form. Spread over the berries using an offset spatula to create a textured, airy finish.
  5. Add small dollops of reserved pudding and whole strawberry halves on top as garnish. Chill for at least 4 hours before serving.

Notes

Ensure the cake cubes are packed tightly to support the weight of the pudding.
Always use cold milk and cold heavy cream for the best structural results.
