  • 2 large Chicken Breasts Boneless, skinless (approx 225g each)
  • 1 tbsp Olive Oil 15ml
  • 4 oz Mozzarella Cheese 115g, sliced or shredded
  • 1 cup Fresh Strawberries 150g, halved lengthwise
  • 1/4 cup Fresh Basil 10g, chiffonade cut
  • 2 tbsp Balsamic Glaze 30ml, thick and reduced
  • 1/2 tsp Kosher Salt To taste
  • 1/4 tsp Black Pepper Freshly cracked

Equipment

  • 1 Cast Iron Skillet Essential for a golden-brown crust.
  • 1 Chef's Knife For the basil chiffonade.

Method
 

Prepare and Season
  1. Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
Sear the Chicken
  1. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6 minutes until a deep golden-brown crust forms.
  2. Flip chicken and cook for another 4-5 minutes until internal temperature reaches 165°F (74°C).
Add Toppings
  1. Lower heat. Top chicken with mozzarella and cover for 60 seconds until melted.
  2. Remove from heat. Place strawberry halves over the cheese and scatter basil chiffonade ribbons.
  3. Drizzle balsamic glaze in a zigzag pattern over the chicken and fruit before serving.

Notes

Use a heavy skillet for the best sear.
Always use fresh basil for the best aromatic experience.
