Ingredients
  

Main Ingredients
  • 24 pieces Wonton wrappers Square shaped
  • 8 oz Cream cheese 225g, softened to room temperature
  • 1/4 cup Strawberry puree 60ml, reduced by half
  • 1/3 cup Granulated sugar 65g
  • 1 tsp Vanilla extract 5ml
  • 1 large Egg Beaten with 1 tbsp water for egg wash
  • 3 cups Vegetable oil 720ml, for frying
  • 1 cup Fresh strawberries 150g, for sauce and garnish
  • 1/4 cup Powdered sugar 30g, for dusting

Equipment

  • 1 Dutch Oven or Deep Skillet For deep frying
  • 1 Digital Thermometer To monitor oil temperature
  • 1 Hand Mixer To whip the cream cheese filling
  • 1 Spider Strainer To remove wontons from oil

Method
 

Prepare the Filling
  1. In a medium bowl, beat softened cream cheese, sugar, vanilla, and strawberry reduction until smooth and pale pink.
  2. Place filling in the fridge for 15 minutes to firm up slightly for easier assembly.
Assemble Wontons
  1. Place 1 tbsp (15g) of filling in the center of a wonton wrapper. Brush edges with egg wash, fold into a triangle, and press firmly to remove air.
Fry and Garnish
  1. Heat oil to 350°F (175°C). Fry wontons for 1-2 minutes per side until bubbly and golden-brown.
  2. Drain on a wire rack. Dust with powdered sugar, drizzle with strawberry sauce, and serve with fresh strawberry slices.

Notes

Do not overfill or the wontons will burst in the oil.
Always use a thermometer to ensure the oil stays at 350°F.
