Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). In a large mixing bowl, whisk together the softened cream cheese, buffalo sauce, sour cream, and garlic powder until a thick, rich mixture forms.
  2. Add the shredded cooked chicken, 1/2 cup of mozzarella, and 1/2 cup of cheddar cheese to the bowl. Gently fold together with a spatula until the chicken is fully coated.
  3. Spread the chicken mixture evenly into a 9-inch (23cm) round cast-iron skillet.
  4. Sprinkle the remaining 1 cup of mozzarella and 1 cup of cheddar cheese evenly over the top, ensuring it is completely covered.
  5. Bake for 15-20 minutes until bubbling with tiny pools of bright orange sauce at the edges. Broil for 2-3 minutes to blister and brown the cheese.
  6. Let rest for 5 minutes. Scatter freshly chopped green onions over the top and serve with yellow corn tortilla chips and crisp green celery sticks.
