  • 1 lb 80/20 Ground Beef 450g, divided into 8 balls
  • 4 units Brioche Buns Split and buttered
  • 8 slices Yellow American Cheese Classic melting cheese
  • 1 small White Onion Slicing into translucent rings
  • 12 slices Dill Pickles Thin circles
  • 1/2 cup Mayonnaise 120ml
  • 2 tbsp Ketchup 30ml
  • 1 tbsp Yellow Mustard 15ml
  • 1 tsp Pickle Juice 5ml

Equipment

  • 1 Cast Iron Skillet Ensures high heat retention for the best char.
  • 1 Heavy Metal Spatula or Burger Press Necessary for creating the thin, smashed patty.
  • 1 Mandolin Slicer For translucent onion rings and thin pickles.

Method
 

Preparation
  1. Whisk mayonnaise, ketchup, mustard, and pickle juice until pale orange and smooth.
  2. Mandolin the white onion into translucent rings and slice the pickles thinly.
Cooking
  1. Butter the brioche buns and toast in a skillet until golden brown. Spread sauce on the bottom bun.
  2. Place cold beef balls in a smoking hot cast iron skillet. Smash immediately with a heavy press until 1/4 inch thick. Season with salt and pepper.
  3. After 90 seconds, scrape and flip the patties. Add American cheese, onions, and pickles. Stack and serve.

Notes

Keep the beef cold until it hits the pan to ensure the fat doesn't melt too early.
Use a piece of parchment paper under your press to prevent sticking.
