Preparation
- Whisk mayonnaise, ketchup, mustard, and pickle juice until pale orange and smooth.
- Mandolin the white onion into translucent rings and slice the pickles thinly.
Cooking
- Butter the brioche buns and toast in a skillet until golden brown. Spread sauce on the bottom bun.
- Place cold beef balls in a smoking hot cast iron skillet. Smash immediately with a heavy press until 1/4 inch thick. Season with salt and pepper.
- After 90 seconds, scrape and flip the patties. Add American cheese, onions, and pickles. Stack and serve.
Notes
Keep the beef cold until it hits the pan to ensure the fat doesn't melt too early.
