Ingredients
  

Unicorn Lemonade Components
  • 1/2 cup Pink Dragon Fruit Syrup 120ml, chilled
  • 1 cup Butterfly Pea Flower Tea 240ml, brewed with 2 tbsp sugar
  • 1/4 cup Fresh Lemon Juice 60ml
  • 1/2 cup Sparkling Water 120ml, chilled
  • 2 cups Jagged Clear Ice Approx 300g
  • 1 wheel Fresh Yellow Lemon Sliced thin

Equipment

  • 1 Tall Clear Highball Glass Ensures visibility of layers.
  • 1 Bar Spoon Used for gentle layering.
  • 1 Small saucepan To make the magenta syrup.

Method
 

Preparation
  1. Simmer dragon fruit powder, water, and sugar until dissolved. Chill thoroughly.
  2. Steep butterfly pea flowers in hot water with sugar for 5 minutes. Strain and chill.
Assembly
  1. Fill glass with ice and wedge the lemon wheel vertically against the side.
  2. Pour magenta syrup at the bottom. Use a bar spoon to layer the cyan tea, then the lemon/sparkling water mix on top.

Notes

Ensure all liquids are ice-cold to prevent layers from mixing.
Use the back of a spoon to break the liquid's fall when pouring.
