Cake Base
  • 3 cups (375g) Cake Flour Sifted
  • 1 cup (225g) Unsalted Butter Softened
  • 2 cups (400g) Granulated Sugar
  • 4 units (200g) Large Eggs Room temperature
  • 1 cup (240ml) Whole Milk
Mousse Filling
  • 2 cups (480ml) Heavy Whipping Cream Cold
  • 1 cup (170g) White Chocolate Chips High quality
  • 2 tsp (10ml) Vanilla Bean Paste For ivory color
  • 1 tsp (5g) Gelatin Powder Optional for extra stability

Equipment

  • 1 Revolving Cake Stand For even frosting application.
  • 1 Offset spatula To spread mousse evenly.
  • 3 Three 8-inch Cake Pans For the sponge layers.

Method
 

Bake the Sponge
  1. Cream softened butter and sugar for 5 minutes until pale and fluffy.
  2. Add eggs one at a time, beating well after each addition to maintain emulsion.
  3. Alternately add flour and milk. Bake at 350°F (175°C) for 25-30 minutes until golden.
Make the Mousse
  1. Melt white chocolate with 1/2 cup cream until smooth. Cool to room temperature.
  2. Whip remaining cream and vanilla bean paste until stiff peaks form.
  3. Gently fold the white chocolate into the whipped cream until dense yet aerated.

Notes

Ensure white chocolate is fully cooled before folding into cream.
Use a hot knife for clean side-profile slices.
