Burger Ingredients
  • 1 lb (450g) Ground Chicken Ideally a mix of breast and thigh
  • 2 cups (60g) Fresh Baby Spinach Chopped and wilted
  • 6 oz (170g) Sharp White Cheddar Half cubed, half sliced
  • 1 tsp (5g) Kosher Salt
  • 1/2 tsp (2g) Black Pepper Freshly cracked
  • 4 units Brioche Buns Split and toasted
  • 1/2 cup (120ml) Mayonnaise Base for aioli
  • 2 cloves Garlic Minced finely
  • 1 leaf Curly Green Lettuce Per burger
  • 3 rings Red Onion Sliced thin, per burger

Equipment

  • 1 Cast Iron Skillet Essential for the golden-charred crust.
  • 1 Chef's Knife For thin onion slicing.

Method
 

Prepare Mix-ins
  1. Sauté chopped spinach for 60 seconds until wilted. Squeeze out all excess moisture using paper towels.
  2. Dice half the white cheddar into 1/4-inch cubes for the interior pockets.
Cook Patties
  1. Mix ground chicken, wilted spinach, and cheddar cubes. Form 4 thick patties with a center thumb-print indentation.
  2. Heat oil in cast iron until shimmering. Sear patties for 5-6 minutes per side until golden-charred edges appear.
  3. Place remaining cheddar slices on patties, cover with lid for 2 minutes to melt thoroughly.

Notes

Always squeeze the spinach dry to prevent soggy burgers.
Use a high-heat oil like avocado or grapeseed for the best sear.
