Prepare the Garlic
- Roast one head of garlic at 400°F (200°C) for 40 minutes until golden and soft.
- Squeeze cloves from the skin and finely mince into a paste for the topping.
Make the Sauce
- Melt butter in a saucepan over medium heat; whisk in flour and cook for 2 minutes until blonde.
- Slowly whisk in milk and cream. Add pressed raw garlic and parmesan. Simmer until the sauce is thick and opaque, coating the back of a spoon.
Assembly
- Spread the White Garlic Pizza Sauce on thin dough. Top with mozzarella, minced roasted garlic, oregano, and pepper.
- Bake at 500°F (260°C) on a pizza stone until the crust shows charred bubbles and cheese has toasted spots.
Notes
For the best visual results, use low-moisture mozzarella to get those distinct golden toasted spots.
