Main Ingredients
  • 12 oz Thick-Cut Corn Tortilla Chips Approx 340g
  • 3 cups Shredded Chicken Breast Approx 450g, cooked
  • 1 cup BBQ Sauce 240ml, plus 2 tbsp for drizzle
  • 3 cups Colby Jack Cheese 336g, freshly shredded
  • 2 Fresh Green Jalapeños Thinly sliced
  • 1/2 small Red Onion Finely diced
  • 1/2 cup Fresh Cilantro Whole leaves
  • 1/4 cup Ranch Dressing 60ml, for drizzle

Equipment

  • 1 Large Rimmed Baking Sheet Dark tray preferred for crispier chips.
  • 1 Box Grater For fresh cheese shredding.

Method
 

Prep and Layer
  1. In a bowl, toss the shredded chicken with 3/4 cup (180ml) of BBQ sauce until glossy and fully coated.
  2. On a large tray, layer half the chips, half the saucy chicken, and half the cheese. Repeat with remaining chips, chicken, and cheese.
Bake and Garnish
  1. Bake at 400°F (205°C) for 8-10 minutes until cheese is bubbly and slightly browned.
  2. Top with diced red onion, jalapeño rounds, whole cilantro, and zig-zag drizzles of ranch and extra BBQ sauce.

Notes

Always shred your own cheese from a block for the best melt.
If using rotisserie chicken, remove the skin before shredding for a cleaner texture.
