  • 3 large Chicken Thighs Bone-in, skin-on (approx. 1.5 lbs / 680g)
  • 2 tbsp Extra Virgin Olive Oil 30ml, divided for searing and glazing
  • 1.5 tsp Maldon Sea Salt 9g, flaky texture
  • 1 tsp Black Peppercorns 2g, freshly coarse cracked
  • 1 tbsp Fresh Rosemary 2g, finely minced
  • 1 tbsp Fresh Italian Parsley 4g, finely chopped
  • 1 tbsp Unsalted Butter 14g, for pan juices

Equipment

  • 1 Cast Iron Skillet 10-inch or 12-inch for best heat retention.
  • 1 Heavy-Duty Tongs For flipping without tearing the skin.
  • 1 Meat Thermometer To ensure internal temp of 165°F.

Method
 

Preparation
  1. Pat the chicken thighs extremely dry with paper towels to ensure a crispy sear. Let sit at room temperature for 20 minutes.
  2. Season the skin side generously with coarse black pepper and half of the Maldon sea salt.
Cooking
  1. Place thighs skin-side down in a cold cast iron skillet. Turn heat to medium and cook for 12-15 minutes until skin is deeply browned and bubbling.
  2. Flip the chicken. Add butter and half the rosemary. Baste the hot fat over the skin for 1 minute.
  3. Transfer the skillet to a 400°F (200°C) oven for 8-10 minutes until internal temperature is 165°F (74°C).
Finishing
  1. Let rest for 5 minutes. Garnish with remaining salt, rosemary, parsley, and a drizzle of olive oil glaze.

Notes

Use a cold pan start to render the fat slowly for the crispiest skin.
Don't move the chicken until it naturally releases from the pan.
